One of my favorite soups is potato soup. This is my standard recipe, the only difference is that it will be dairy free. A regular broth soup instead of a cream soup using olive oil instead of butter, and pork instead of bacon. But when I could have all the dairy, I made this a lot.
6 cups diced potatoes
2 medium onions, chopped
3 cups chicken broth
2-3 carrots chopped
1/4 cup butter
1 tsp salt
1/4 tsp pepper
3 cups milk
3 tbsp. chopped parsley
5-8 slices crumbled bacon
Combine all ingredients except milk and parsley in crockpot. Cook on low 7-8 hours, or until potatoes are done. Add milk and parsley and cook on high another 30 minutes. Garnish with cheddar cheese and fresh chives. For creamier soup, substitute 1 cup of cream for 1 cup of milk.
