Canning Season

IMG_20140930_141521057~2Actually, canning season is year around here. But as far as the garden goes, we are pretty much done. We’ll begin stocking up on things we didn’t plant, or didn’t plant enough of and begin canning or freezing. I am trying to do more freezing than canning since we’ll be getting our beef after the first of the year.  I feel the need to be prepared for a hard winter.

This past weekend I picked up a 50 pound bag of potatoes and I hope to get those canned this week.  I also have several pie pumpkins that I need to get baked and into the freezer.  I’m still hoping to find some apples to make apple sauce.

Dinner tonight is going to be stuffed peppers.  All the peppers are from our garden, the pablano will be for hubby and son, the sweet bells will be for me.

I am hoping to get to bed early tonight, insomnia has been plaguing me lately and the lack of sleep is really wearing on me.
